In the heart of the Bayou of South Louisiana, a young Cajun boy named Glenn spent his days exploring the lush wetlands, trapping nutria, raccoons, otters, and muskrats. At just 12 years old, he was already learning the ways of the wild, with dreams that stretched far beyond the horizon.

When Glenn reached his teens, he made a life-changing decision to quit school and dive headfirst into commercial fishing for shrimp. The work was grueling, but the thrill of being out on the water fueled his spirit. He spent years perfecting his craft, yet as he moved into his twenties, the demands of life pushed him to seek new opportunities. He took jobs in the oil fields, always maintaining his connection to the water and the land.

By the time he reached his thirties, Glenn was ready for a new challenge. He went to work at his in-law’s meat market in Maurice Louisiana! He had a vision: to open a Cajun meat market that would honor his heritage and support his family. Little did he know, his passion for butchering ran deep in his blood—his great-grandfather had been a butcher in an era when horse and buggy were the only means of transport.

With hard work and dedication, Glenn and Leah opened the Gourmet Butcher Block, and quickly became known for their unique offerings, especially their famous turducken. It wasn’t long before local television stations began to take notice, showcasing their talents and the rich flavors of Cajun cuisine.

Then one day, the phone rang. It was Fox Sports letting him know that John Madden wanted Glenn’s turducken to be the Official food for the “All-Madden Team”. Overwhelmed yet excited, Glenn seized the opportunity. The segment showcased not only the culinary delight but also the heart of Cajun culture, with Glenn’s warmth and passion shining through.

As the years went by, Glenn found himself on numerous television shows, including “All Madden” Documentary, Travel Channel and Food Network. Since John Madden’s passing Gourmet Butcher Block has been on every Thanksgiving Day football game, bringing his turducken to homes across America. His journey from the swamps of Louisiana to national fame was surreal. He credited all his success to hard work and, above all, to God, who guided him every step of the way.

Today, Gourmet Butcher Block stands as a testament to his journey—a place where the flavors of the bayou come alive and where every customer is treated like family. Glenn often reflects on his humble beginnings, grateful for the life he never dreamed possible, yet always rooted in the rich culture that shaped him.

Today their son Chazz has taken the helm of the Gourmet Butcher Block, but you can still find Glenn behind the counter getting in the way from time to time.
